Supper in a pan. When it’s stinking hot, you’re starving and a trip to the supermarket is out of the question. Eggs. Eggs and tomatoes. Fried eggs and fried tomatoes! Soft bread to plough into the runny yolks, sprinkle of coriander, squirt of Culley’s sriracha … Yeah, I’m up for it.
The trick? Cook in butter! Spoon the sizzling browning butter over the gooey bits of the egg white so they are cooked through when the yolks are just so-so, how you like them. Eat out of the pan and scoop up every skerrick of browned buttery juice with hunks of bread.
