I’ve just posted some new cooking classes for June – time to think about winter food and making seasonal vegetables and fruits into memorable dishes. This class has home cooking at its heart, but the sort of dishes I’ll be serving up will hit the spot for casual entertaining with friends, too. For something a bit more exotic, come along to the Spanish class and enjoy a range of exceptional dishes. And we’ll be tasting sherry vinegar! That might sound offbeat, but sherry vinegar can be your secret ingredient to adding punch to savoury dishes. It’s Mother’s Day on Sunday – at least in this part of the world. That means it is time to cook your mum or mother-in-law, or your partner, something special. Scones served warm with a cuppa is an easy option, and something kids can manage Buttermilk Date Scones but if you like venturing into the kitchen to cook up a storm, check out the other dishes: Hash & Eggs, well, perhaps I should qualify that and say a hash of smoked fish and potatoes with eggs, is one of my favourite brunch indulgences. And a Blackberry & Apple Pie with the flakiest homemade pastry is just sensational. Use frozen blackberries by all means, but get some good tangy apples to go with them.
Do you know much about dates? Most of us don’t. They’re a pretty special food containing just about everything to sustain life (you could survive on them alone for quite a wee while if you had to, but a bit of camel’s milk would see you last a bit longer!). Anyway, dates can add significant goodness to your diet, and if you use them to sweeten food, you can cut down, or cut out, white sugar. That’s got to be a good thing. They are sticky and help bind ingredients together so are a useful component in ‘unbaking’ baking. I’m talking about semi-dried dates, not the hard sugary nuggets of days gone by. I’ve added another Shared Kitchen favourite to the Home Page this week – Lamb Shanks with Mint & Date Stuffing. It’s a beauty. Shanks are expensive I know, but you can eek them out with a good mash and other inexpensive seasonal vegetables.
Plenty of good flavours here. There’s no excuse not to cook. Get to it!
