Red pepper teamed up with snappy fresh asparagus brings a touch of colour to simple mid-week meals. It’s easy, too, adds crunch, and, the combo with garlic and ginger is unbelievably sweet.
1 large red pepper (bell pepper/capsicum)
1 bunch asparagus
1 small red onion
2 cloves garlic, peeled and thinly sliced
1 tsp finely grated peeled ginger
1 Tbsp olive or peanut oil
¼ tsp salt, or to taste
1 tsp ground coriander seeds (optional)
1 Prepare the vegetables. Halve red pepper, remove core and seeds and slice thinly. Trim asparagus, wash and pat dry with paper towels, then slice on the diagonal into short lengths. Peel and thinly slice red onion. Prepare garlic and ginger.
2 Heat a wok over a medium-high heat. Add oil and let it get nice and hot. Add asparagus and stir-fry for 1 minute. Add red pepper and stir-fry for 1 minute. Add red onion and stir-fry for 1 minute, then add garlic and ginger and stir-fry for less than a minute, or until garlic has softened.
3 Season with a little salt, then splash in 1 tablespoon of water. Toss vegetables in the steam, then quickly transfer to a serving bowl. Serve immediately.
This is so easy, and speedy, though you do need to start with a hot wok. You could add soy sauce, oyster sauce or chilli sauce, but there is really no need because the vegetables are unbelievably sweet and tasty.
