Recipe from Riverstone Kitchen Another Helping

50ml (just under 2 fluid ounces) olive oil
Zest and juice of 1 lime
3 Tbsp peach chutney
½ tsp ground cumin
2 cups coriander (cilantro) leaves, roughly chopped
1 long red chilli, seeds removed, finely chopped
¼ small red onion, finely chopped
3 large ripe avocados
Sea salt and pepper
1 To make salsa, place olive oil, lime zest and juice, chutney, cumin,
coriander, chilli and onion in a large bowl.
2 Halve avocados, remove the skins and stones and roughly chop. Add avocado to the bowl of other ingredients and gently mix together.
3 Season salsa to taste with a little salt and pepper and serve. Best eaten on the day.
