You need nice fresh mushrooms for this recipe – they should be as crisp as an apple.
500g (about 1 pound) time snow-white or brown button mushrooms, wiped clean if large and halved
4 Tbsp extra virgin olive oil
Several sprigs fresh thyme
8 small fresh bay leaves
Finely grated zest 1 lemon
Salt & freshly ground black pepper
2 Cook on a very hot barbecue hot plate (griddle), turning often, until they are golden brown; don’t overcook – they should be well browned but not soft.Transfer mushrooms to a side plate, toss through some salt and serve immediately.
