This bright, crunchy salad is a perfect foil to barbecued meats or rich dishes, and perks up simple dishes of steamed fish.
1 large cucumber (telegraph / tender-skinned), chilled
2 tsp raw sugar
2 Tbsp white vinegar
2-3 slim spring onions (scallions), trimmed and finely sliced
1 hot red chilli, finely chopped
2 Tbsp chopped mint or coriander (cilantro), or some of both
¼ cup chopped salted peanuts
1 Peel cucumber, cut into chunks and transfer to a bowl. Mix sugar and vinegar together in a small dish until sugar is dissolved. Add a few good pinches of salt and toss with the cucumber.
