Clamming it up at Te Matuku!

Last Sunday at the Te Matuku Oyster shop’s official opening I served up crispy-crumbed baked clams and baby coconut fish cakes. They were a hit! The clams are a favourite of mine (Southern Clams), coming from the crystal clear chilly waters of Otago. Their littleneck clams are so good, so plump, sweet and juicy, that they’re exported around the world, and make their way onto top restaurant menus in the US, UK and Europe and Asia,  but there’s still plenty for us!
