Richard and Helen Dorresteyn farm around 120 head of milking buffalo on their farm in Clevedon, south of Auckland. They produce a range of products including balls of mozzarella in various sizes, ricotta, yoghurt and marinated buffalo ‘cheese’. They’ve won a stack of awards for their efforts, which is hardly a surprise, because their products are superbly crafted.

Their new product, cute mini balls of mozzarella, is a fresh preservative free product, dispatched the day it is manufactured with a 2-week chilled shelf life.

Compared to cow’s milk buffalo milk is clean white in colour and contains more protein and calcium with roughly half the cholesterol. It is more easily digested than cow’s milk.

The mini mozzarella balls are fab in a simple salad – treat them carefully because they are wonderously soft – or added to a pizza.

Drain off liquid and carefully slip mozzarella minis onto a serving plate. Eat as is or drizzle with oil, or titivate with tomatoes and basil for a new take on salad Caprese.

Don’t forget a good drizzle of extra virgin olive oil and sprinkle of flaky sea salt.
