3 soft tortillas, an egg and an avo
Yes, sometimes my life is just as boring as that … 3 soft tortillas stare me in the face at 7.00pm. Starving, I have to get creative. Eggs! Great. An avocado I’ve been nursing in the fruit bowl, perfectly ripe. Joy! A jar of Katy’s barbecue chilli sauce. Fab. A few herbs from the garden, something salady. That’ll do. It’s a meal good enough to sustain you (and me!) until morning.
You could fry the eggs, but I like the texture of eggs soft-boiled for 6 minutes, or 7 minutes for large ones. Read about soft-cooked eggs here Eggs and my previous riff on eggs and avo Eggs and Avo
Avocado needs little more than a squirt of lemon or lime and a sprinkle of flaky sea salt. I’ve used soft wheat tortillas, but this will work on corn tortillas – both need to be heated briefly in a hot pan (most packs of tortillas have a suggestion of 10 seconds a side to reheat, but I always do mine for at least 30 seconds, and in this dish, don’t mind if they get a little crunchy because I am not rolling them up). Or you could make this with decent bread. Don’t get me started on supermarket crap bread (decent bread is SLOW RISE bread, bread made over time, the grains fermented, so your gut doesn’t have to do the fermenting). Anyway …..
Heat tortillas, spread with squished avo, a squirt of lemon or lime, a soft-cooked egg broken over the top, blobs of chilli sauce, and a smattering of fresh herbs. Bit of salad on the side. Scrumptious.

Good on you! It so riles me with so many people becoming gluten-intolerant … eating quick-rise breads that stomachs can’t handle.
