A happy trio of tartinades
Ta-ta-tartinade! That’s the latest release from the clever clogs at Clevedon Buffalo Co. Buffalo milk is whipped to a creamy fluffy spread and scented with herbs, garlic, smoked paprika porcini and truffle. The result? Superior spreads with a lovely mouthfeel – not too rich, but nicely creamy – sporting good flavour and a nice little tang, and spreads that stay spreadable and don’t shatter crackers or tear bread.

The Riverine buffalo loaf around the lush pastures of Richard and Helen Dorresteyn’s farm in Clevedon, just south of Auckland, producing milk that contains 58% more calcium, 40% more protein and 43% less cholesterol than regular cow’s milk. And a plus, buffalo milk is usually tolerated by those with a cow’s milk allergy.
The Dorresteyns have won numerous awards for their innovative products including their cherry mozzarella, bocconcini, ricotta, mozzarella, yoghurt and marinated buffalo cheese, including Outstanding Producer in the 2019 Lewisham Awards, and now TAH-DAH for the Ta-Ta-Tartinades!
