Sometimes I yearn for something hot and cheesy, all sort of melty and dribbly. Any old mushrooms on toast won’t do. I’m after the no-compromise, flavour-packed, cheesy, melty richer-than-rich version. Yeah. Brilliant. Just make these, you’ll have no regrets.

How to make the most of cultivated mushrooms.
If your barbecue is still doing service, or if you have just cleaned the cobwebs off yours in preparation for summer, a sizzle-up of mushrooms for a late breakfast with a tomato on the side and an egg sunny side up, or over easy, is just the business.
Here’s a tip – moisture makes mushrooms soften and rot, so if they are in plastic packaging transfer to a container lined with paper towels to keep them dry. Store refrigerated in the vegetable crisper.
