Slosh in the brandy
I don’t drink brandy but I love the smell of it, especially with dried fruit. I reckon it makes all the difference to a rich fruit cake. Slosh it in with the dried fruit and soak the fruit overnight. Once the cake is cooked and cooled, dribble a thimbleful onto the cake — drill a few holes with skewers first — then add a little more brandy cake once a week or when you remember to do it.
