6 large flat field mushrooms (or equivalent ‘slim’ ones) Olive oil Salt Freshly ground black pepper 1 tsp chopped rosemary 2 tsp dried breadcrumbs or crushed panko crumbs Butter Smoked paprika for sprinkling
1 Preheat oven to 200°C (400°F). Wipe mushrooms clean with damp paper towels. If you have ‘meaty’ mushrooms (large thick ones; most field mushrooms don’t need this), rub smooth side of mushrooms with oil (not the gills). Carefully trim off stalks and chop finely. Put mushrooms in a shallow oven dish. Line with baking (parchment) paper if preferred.
3 Bake for about 15 minutes until browned and sizzling. Serve hot.
No smoked paprika? Use regular paprika or grated parmesan or tasty cheddar cheese.
Like garlic? Add a little finely chopped garlic.
Vegan? Drizzle with a little extra virgin olive oil in place of butter and use crumbs and paprika for colour and crunch.
