
Oh, this is more than a usual chicken sandwich made with bits and bobs picked off a roasted chicken carcass … this is chicken sandwich deluxe!
Ingredients
—One batch of Crunchy Chicken Breasts with Ricotta Stuffing (see Link below) Sliced sourdough bread Mayonnaise Cos (romaine) lettuce leaves Tomatoes, sliced Flaky sea salt Freshly ground black pepper Lemon wedges Fresh herbs (basil, parsley, chives, tarragon)
Method
—1 Prepare and cook Crunchy Chicken Breasts with Ricotta Stuffing. Cool, cover and chill until ready to make sandwiches.
2 Slice chicken with a thin sharp knife. Assemble sandwiches by spreading bread with mayonnaise, then top with lettuce leaves, sliced chicken and tomatoes. Season with a little salt and pepper, squeeze over a little lemon juice and scatter with herbs. Devour!
Recipe Notes
If preparing the sandwiches for a picnic, omit the tomato and hold off on the squeeze of lemon to ensure the bread doesn’t become soggy.
