
The photo says it all: golden, crunchy, cheesy ....
Ingredients
—3 leftover (cold) jacket-baked potatoes 1 Tbsp butter 1 cup grated tasty or vintage cheddar cheese Salt and pepper to taste
Method
—1 Preheat oven to 200°C (400°F). Cut potatoes in half, then into chunks. Put them in a shallow ovenproof dish and season with a little salt and pepper. Scatter with cheese and dot with butter.
2 Bake potatoes for 20-25 minutes until golden and crisp. Scrape the cheese up from the bottom of the dish to bring all the crunchy bits to the top, serve and devour!
