
It's time to give the old (or young!) bloke a treat and make a sandwich for him stuffed full of gorgeous ingredients.
Ingredients
—Bread buns or rolls, split Mayonnaise Lettuce leaves Haloumi Butter Chutney of choice Sliced cooked lamb, beef or chicken Basil leaves Sliced tomatoes Sliced radish Sliced gherkins Flaky sea salt Freshly ground black pepper
Method
—1 Have all the ingredients sliced and ready to go. Toast the buns and spread with mayo. Top with lettuce leaves.
2 Dry haloumi cheese with paper towels and slice. Heat a frying pan over medium heat and drop in a knob of butter. Let it sizzle, then add haloumi. Cook until golden on both sides. Layer up buns or rolls with haloumi, chutney, meat, basil, tomatoes, radish and gherkin, then sprinkle with salt and pepper. Put bread tops on, cut in half and serve. Dad’s sandwich never looked better!
I have such trouble trying to cook Haloumi. It just turns out like slices of rubber and it squeaks when I am chewing it. Am I buying the wrong sort of Haloumi or just cooking it wrong?
I heat the pan, rub oil onto the slices then into the pan, wait for it to look brown and flip it over till brown. It always looks so nice but is always a disappointment. Please tell me???
Hi Mary, I wonder whether you eat butter? If so, you will find it is better cooked in sizzling butter. Slice the haloumi, pat dry, heat a pan – non-stick pan or cast iron – and when it is hot add a good tablespoon of butter. It should sizzle straight away, and be on the point of turning brown. Add haloumi and fry until golden. Turn with a spatula and cook the other side until golden. Serve immediately with lemon wedges. The haloumi is not rubbed with anything before cooking. You can also cook it like this but in olive oil, though it won’t turn as golden. So, hot pan, sizzling butter, haloumi in, cook until golden both sides and serve immediately. It is nowhere near as pleasant when it sets. And, yes, it does squeak a bit on your teeth! I love Zany Zeus haloumi made in Wellington. Let me know if this helps Mary.
