
Bright, juicy and glossy, gorgeous fruit is hard to resist.
Ingredients
—1 perfectly ripe mango 1 Tbsp lime juice 1 punnet (1¾ cups) strawberries 1 Tbsp maple syrup 4 fresh kaffir lime leaves (or the zest of 1 lime)
Method
—1 Peel mango, cut off the cheeks (fleshy rounded sides) and flesh and cut into small chunks. Transfer to a bowl and squirt over lime juice. Toss gently. If using lime zest, remove it before squeezing the lime! Add lime zest at this point if using.
2 Hull and slice strawberries and toss gently with maple syrup. Pour strawberries and syrup over mango. Leave fruits for 15 minutes.
3 Finely crush or blend the lime leaves, removing the spines of the leaves first. It is easy to blend the leaves into a coarse sort of powdery fluff in a spice or coffee grinder. Failing that, crush with a mortar and pestle, or chop exceedingly finely with a sharp knife.
4 Scatter fruit with lime leaf powder or crushed or chopped lime leaves, give everything a gentle toss, then serve. Leftover fruit will keep well enough for a day if covered and refrigerated.
