
This makes a fresh tasting and creamy yoghurt. The coconut adds sweetness, but if it is too tart for you, drizzle with maple syrup.
Ingredients
—1 tart apple (I use Granny Smith) 1½ cups wholegrain oats ¼ cup coconut flakes 2 Tbsp freeze dried blackcurrants ½ cups plain unsweetened yoghurt ½ cup water Milk or extra yoghurt to thin, optional Chopped hazelnuts or walnuts for serving Maple syrup, optional
Method
—1 Peel the apple and grate on a box grater. Put oats and grated apple in a bowl, add coconut and blackcurrants and mix in yoghurt and water. Cover and chill overnight.
2 To serve, check consistency and thin with extra water or milk if necessary. Dish into bowls and top with chopped nuts.
Recipe Notes
Blackcurrants are exceptionally high in antioxidants and Vitamin C. Viberi is a certified organic orchard in South Canterbury producing freeze-dried blackcurrants. They’re readily available in New Zealand. Fresh raspberries make a good substitute but add them just before serving.
