
Ah, how I love easy fries! These ones take on plenty of smoky flavour from paprika.
Ingredients
—1.5kg (about 3¼ pound) floury potatoes 3 Tbsp olive oil Flaky sea salt ¾ tsp smoked Spanish paprika (sweet) 2 large cloves garlic, peeled Small bunch parsley (to provide about 2 Tbsp chopped parsley)
Method
—Preheat oven to 190°C (375°F).
1 Peel potatoes and cut into fat fingers. Wrap in a clean tea towel and leave to dry for 15–30 minutes.
2 Transfer potatoes to a shallow ovenproof dish lined with (parchment) paper, drizzle with olive oil and sprinkle with ¾ teaspoon of salt and the smoked paprika. Use the paper to move potatoes around to coat them with oil and seasoning.
3 Cook potatoes in preheated oven for about 1 hour, turning once or twice, or until golden.
4 Chop garlic and parsley together with a large knife. When potatoes are ready, stir through garlic and parsley and return potatoes to oven for 2–3 minutes until they smell fragrant and garlic is sizzling. Serve immediately.
