A quick cucumber pickle does wonders for oysters, adding a fresh clean aromatic bite.
1 Tbsp caster sugar Few pinches of salt 50ml white vinegar ½ small telegraph cucumber ½ red chilli 12 Te Matuku oysters, loosened from the shell, chilled (or the best freshest oysters you can find)
1 Dissolve the sugar and salt in the vinegar in a bowl. Add cucumber and chilli. Rest mixture for 10 minutes.
2 When ready to serve, stir pickle again, then spoon over oysters and serve.
