I love the combination of juicy pears and parmesan and think a salad of them with cos (romaine) makes a stunning accompaniment to a roast chicken, or to Crunchy Chicken Breast with Ricotta Stuffing. You need a perfect pear – it shouldn’t be hard and woody nor squishy ripe.
3 Tbsp extra virgin olive oil 1 Tbsp lemon juice Few pinches flaky sea salt Freshly ground black pepper to taste 1 large perfectly ripe pear 1 cos lettuce, broken apart into leaves, washed and dried Fresh herbs – choose from tarragon, basil and parsley (or use all three!) Small piece of parmesan cheese
1 Whisk oil, lemon juice, salt and pepper together in a shallow serving bowl.
2 Peel and chop pear then toss gently with dressing, adding roughly chopped or torn herbs. Tear cos leaves into bite-sized pieces and add to bowl. Toss gently, shave over a little parmesan with a potato peeler and serve immediately.
