This is a quick and really useful sauce. The lemony freshness of tartare sauce is perfect for fish ... but try it with lamb, chicken, roast cauliflower, a tray of baked veg ... it improves them all.
1 cup mayonnaise 2 Tbsp finely chopped gherkin 2 Tbsp chopped capers 2 Tbsp chopped parsley Finely grated zest 1 lemon 1 Tbsp lemon juice Pinch of salt Optional: 1 Tbsp chopped chives, coriander(cilantro) or mint
To make a good Tartare sauce (and the sauce is sometimes spelled Tartar), you need a good brand of ready-made mayonnaise. My choice is BEST brand mayo. Simply drain and dry the gherkin and capers before chopping, then mix everything together. The sauce will keep well for a day or two in the fridge.
