Radish Salad

SERVES: 3-4

Radish Salad copy

Chillies a bit steep in price? Use a little chopped red pepper (capsicum/bell pepper) for a splash of colour, and a smattering of chilli flakes for a hot bite.

Ingredients
—

1 bunch radishes Half a small red pepper (capsicum/bell pepper) 1 Tbsp lemon juice Flaky sea salt 1 Tbsp each chopped mint and parsley Chilli flakes, optional

Method
—

Slice radishes thinly on a mandolin, or trim and slice as thinly as you can with a sharp knife. Thinly slice red pepper then chop finely. Put radishes and red pepper in a bowl and toss with lemon juice, a good few pinches of sea salt, and the herbs. Sprinkle with chilli flakes, give one more toss, and serve.
