
Tomatoes love salt, no doubt about that. Team them with feta to make them sing.
Method
—You can’t go wrong with a big juicy ripe tomato sliced stacked with slivers of feta. All you need is a drizzle of exquisite extra virgin olive oil, a sprinkle of flaky sea salt and grind of pepper, and a handful of basil leaves to turn this into a lunch worth devouring. Oh, good bread as an accompaniment goes without saying.
If you can’t find ‘Sicilian’ tomatoes, use a meaty beefsteak tomato instead.
