
These are addictive in the nicest way!
Ingredients
—1 Tbsp olive oil Stem of lemon grass, cut into short lengths 1½ cups assorted nuts including unblanched almonds, natural macadamia nuts, brazil nuts and walnut halves 1 tsp chilli flakes ½ tsp fennel seeds Finely grated zest 2 limes 1 tsp flaky sea salt ½ tsp ground cinnamon
Method
—1 Heat oil in a small frying pan over medium heat. Add lemon grass, almonds, macadamia nuts and Brazil nuts. Cook for 3-5 minutes, stirring constantly, then add walnut halves and cook a few minutes more. Lower the heat. Add chilli flakes, fennel seeds and lime zest and cook stirring a few minutes more until nuts are lightly browned; be careful not to overcook them. Tip nuts and all the spicy bits onto a plate and sprinkle over sea salt and cinnamon. Toss salt through spiced nuts then leave them to cool.
2 Once the spiced nuts are cool store airtight. They’ll stay fresh for more than a week.
