
How to keep kids amused these school holidays? How about setting up a table somewhere, then let them set to making strawberry sandwiches. They'll eat heaps of strawberries, which is no bad thing because they are loaded with vitamin C, and you'll get some peace and quiet for an hour.
These little sandwiches are also elegant enough to serve with Champagne at a drinks party. They're quite delightful and a great talking point. Make sure you use perfect strawberries, red all the way to the greenery.
Method
—1 Lightly spread bread with sour cream. Hull and thinly slice strawberries. Lay strawberries on top of half the slices of bread. Grind over a little white pepper if using. Top with remaining bread and press gently together.

2 Wrap sandwiches tightly with plastic food wrap and keep refrigerated until 15 minutes before serving.
