
This dish can be served hot, hottish or at room temperature.
Ingredients
—1.5 (5 oz) kg small gold or orange kumara, peeled and cut into long fat wedges 3 yellow peppers (bell peppers / capsicums), halved, cored and deseeded and cut into chunks 1½ Tbsp olive oil 1½ tsp sea salt Freshly ground black pepper 1 Tbsp crushed coriander seeds 2 Tbsp capers, drained and chopped 1 cup small basil leaves
Method
—1 Preheat oven to 180°C (350°F). Put kumara and peppers in a large shallow ovenproof dish lined with baking (parchment) paper. Drizzle with oil, season with salt, pepper and crushed coriander seeds. Lift edges of paper to help coat vegetables with oil and seasonings.
2 Bake vegetables for 50-60 minutes, turning them 2-3 times during cooking, or until golden and tender. Cool for 15 or so minutes, then toss through capers and scatter with basil if using.

it was so good to read your opening ‘share’ and gosh it is so hard for us all and I do sympathize and understand totally. I too miss terribly our social interaction with people and find on walks the odd person nearly falling down a cliff not to be near me, when normally we are embracing even strangers with a cheerful goodmorning. one woman on my walk last week looked at me as if I was Dracula and I said so humorously and she was not amused and quite aggressive ………. holly molly how long do we have to put up with this reaction from people. Like you to have friends and near strangers give you welcoming ‘hello’, a hug and a kiss on each cheek is the essence of life ……….. and yes I too had such a bad day recently I was crying over any little upset, which normally I can cope with casting my optimistic net over the problem.
