Quick Cauliflower & Ginger Stir-fry
Introduction
Crunchy, fresh and a great way to use up cauliflower stalks.
Serves: 4
Ingredients
½ small cauliflower
1 Tbsp olive oil
1 Tbsp peeled and thinly sliced ginger
1 large clove garlic, peeled and thinly sliced
Flaky sea salt
½ tsp sesame oil
2 Tbsp shredded mint
Soy sauce to serve (optional) – add a few slices of hot chilli for added buzz

Method
1 Slice cauliflower very thinly. This is easiest done on a mandolin, but failing that, with a sharp knife.
2 Heat oil in a medium frying pan (skillet) over medium-high heat, and when it’s hot, add the cauliflower. Stir-fry for 1 minute. Add ginger and garlic and stir-fry for 1 minute. Season with a little flaky salt, then stir in sesame oil and mint. Serve immediately. Splash with soy sauce (natural or spiked with chilli slices) if liked.

Serve with anything – to go in wraps or rice wrappers, with vegetarian dishes or with fish or pork.
