Allspice is a gorgeously warming spice made from the dried small berries of the Jamaican pepper tree. Once the berries are ground the tantalising fragrance, encompassing the scent of cloves, cinnamon and mace, gradually dissipates, so buy berries whole and grind fresh, or replace ground allspice every few months. Used with meats, in curries, in baking, in pickles and in cured meat products. If whatever you are cooking – be it meatballs, a stew, or baking – seems a tad unexceptional, lift the flavour by sprinkling in a bit of allspice. It works!
