This is perfect for a light summery meal, or as an alternative Christmas day lunch.

Everyone loves a fritter, hot and sizzling straight out of the frying pan, or left to cool to room temperature.

Smoked fish ¬– I’m talking white fish, not smoked salmon – is delicious with tangy fruits such as nectarine and apricot.

Slowly-cooked peppers give this colourful salad a scrumptious sweetness.

You need just six ingredients to make the quintessential Greek salad, and oil and vinegar, of course. Anything else is negotiable.

I ate these recently in Chania, on the island of Crete. So simple, so divine.

This is an OMG dish! (It’s Sooooo delicious!) Look for fabulous outdoor tomatoes at farmers’ markets … unless you are lucky enough to have your own.


Bland or dry potato salad is a bore. Toss gently with the dressing while the potatoes are still warm so they absorb the flavours.

Move over minced meat Fish Burgies are in town!

Fresh, crunchy, and a nice little hot bite.

Quick pickles add a touch of zing!

Crunchy crusts, spicy chorizo and sweet and tender yellow peppers. Mmmm.


Summer tart – make it while apricots are plentiful.

This is a stunning dish. Serve this gratin hot while the mozzarella is melting and stretchy, or at room temperature (the cheese will still be supple but not stretchy).

Pretty, sweet and sharp, green tomatoes make a perfect foil to the nutty taste and rich texture of avocados.

Leftovers are simply gorgeous squished on bread.

This richly flavoured curry is the answer when you want a break from barbecued meats.
