Toasted Sesame Bagels

Introduction
Toasted bagels make a tasty crunchy accompaniment for dips and spreads. They’re a lot cheaper than buying ready-made croutes, or crackers, and can be made several days in advance.
Serves: 4-6
Ingredients
4 sesame bagels
75ml olive oil
Flaky sea salt
Method
1 Preheat oven to 180°C (350°F). Slice the bagels in half vertically then cut each half-bagel into 7–8 thin pieces. Brush bagel slices on both sides with olive oil. Arrange on baking sheets (trays) lined with baking (parchment) paper, and sprinkle with any sesame seeds that have fallen off and a little flaky sea salt.
2 Bake for about 7 minutes until lightly golden; keep an eye on them because if they darken too much they become brittle and taste burnt. Tip into a large roasting tin to cool, then store airtight. They’ll keep fresh for several days.
Recipe Notes
The bagels can also be served topped with labna and smoked fish or salmon, or roasted eggplant (aubergine) or other roasted or grilled vegetables.
