Bircher Muesli with Apple & Brazil Nuts

Introduction
If you have coconut-flavoured yoghurt, make the bircher muesli with 1 cup yoghurt and ¼ cup coconut yoghurt, and serve muesli with a dollop of yoghurt on top.
Serves: 4-6
Ingredients
1 cup rolled oats
1¼ cups unsweetened yoghurt, plus extra for serving
1 Tbsp sugar, optional
1 peeled and grated tart apple tossed with 1 Tbsp lemon juice
4 slivered Brazil nuts
¼ cup coconut flakes
¼-½ cup milk
2 Tbsp aromatic honey
Sugared tamarillos
4 tamarillos
2-3 Tbsp brown sugar
Method
1 Put the oats in a bowl and mix in yoghurt, and sugar, if using. Add grated apple and Brazil nuts, cover dish and refrigerate for 6-24 hours.
2 Plunge tamarillos into a saucepan of gently boiling water and simmer for 2 minutes. Drain, cool in a bowl of cold water and peel. Cut each tamarillo into quarters, leaving the fruit attached at the stems. Transfer to a dish and sprinkle with brown sugar. Cover and refrigerate overnight.
3 In the morning, toast the coconut flakes in a dry frying pan (skillet). If the muesli is very thick, add a little milk to thin (or yoghurt; or serve a little yoghurt on top). Garnish with toasted coconut and drizzle with honey (if the honey is stiff, warm it in microwave, or in a cup in a basin of hot water). Serve immediately with sugared tamarillos.
