Peanut Crunchy Chews

Introduction
Nutty and caramelly, these sweet treats are perfect with a cuppa. It’s an easy recipe for kids to help with as once the nuts are roasted and chopped, it’s ‘measure and stir’. The chews will keep for about a week in an airtight container.
Serves: Makes 30 pieces
Ingredients
1 cup (150g / 5 oz) raw shelled peanuts
1½ cups (225g / 7½ oz) rolled oats
1 tsp baking powder
1 cup (150g / 5 oz) brown sugar
½ tsp salt
100g (3½ oz) melted butter
Method
1 Preheat oven to 180°C (350°F). Spread peanuts in a shallow roasting tin and roast for 8-10 minutes, or until coloured (don’t get them too dark because they continue to colour as they cool). Cool then chop coarsely.
2 Lower oven temperature to 170°C (325°F). Put oats, baking powder, sugar, peanuts and salt in a bowl. Pour over melted butter and mix well with a fork.
2 Press into a greased tin (approximately 30cm x 21cm / 11” x 8”) and bake for 10-12 minutes, until browned and bubbling. Cut into squares while still warm. When cool, transfer to a cake rack and cool completely before storing airtight.
