Alligator Salad
Introduction
Alligator salad? Whaaaa? Avocados used to be called alligator pears. True! But moving right along … mixing avocado and pear together creates a sublime salad.
Serves: 3-4
Ingredients
1 large perfectly ripe pear
Lemon for squeezing
1 large perfectly ripe avocado
Flaky sea salt
Bunch of mesclun salad
Freshly ground black pepper
Small mint leaves
Extra virgin olive oil – the best you can buy

Method
1 Peel pear, slice it on a board and squeeze over lemon juice. Halve avocado, remove stone and skin and slice thickly. Squeeze over a little lemon juice and sprinkle with sea salt.
2 Arrange mesclun, sliced pear and avocado on a serving plate. Grind over a little pepper and sprinkle with flaky sea salt. Strew with mint leaves. Drizzle with oil and serve.
