Whoa!. This will get him for sending me pics of his dinner: my son’s dinner the other night. With help from friend Matt they constructed what looks to be a mammoth burger. Shame I never got any!
Matt was in charge of the ham steaks. These were cut from the bone and glazed with maple sauce, soy, Worcestershire sauce and wholegrain mustard. Next came caramelised pineapple with cayenne pepper. Char-grilled red peppers and fried onions were next. Chipotle lime mayo was added for interest. And Luca’s patented salsa, the name of which I can’t repeat here!!! Made with ginger, red pepper, lemon juice & zest, garlic, coriander & oil. The accompanying watermelon salad idea he must have stolen from somewhere: watermelon, chilli, lemon juice & zest, coriander, oil, chopped chilli, chilli flakes (’cause the chilli wasn’t hot enough) and a dash of sriracha sauce for good measure.
This was just a quiet Monday night. You should see the menu when they go hard!
