Here’s that watermelon cooler I was talking about last week. I’ve just bought two cute sugar-sweet watermelons and I know what I will be doing with them around 5.00pm today.
Chill watermelon, cut into slices with a sharp sturdy knife, arrange on a platter and squeeze over lime juice. Sieve over a little hot chilli powder and garnish with finely shredded kaffir lime leaves. Serve with more lime wedges for squeezing. This is great as an exhilarating thirst quencher, especially served with spicy food. If preferred, remove rind from watermelon and cut into cubes before dousing with lime juice and finishing off with chilli powder and flaky sea salt.
