Dukkah – get doing the dukkah jig!
Yay for Moore Wilsons in Wellington. They are now fully stocked with Shared Kitchen comestibles – superior marinated olives in extra virgin olive oil, preserved lemons and our famous dukkah! Many people ask me how do you use dukkah. It has so many uses, one of which is eating it by the spoonful! But perhaps you should dunk a piece of bread into gorgeous fresh olive oil then dunk it into dukkah first. Served with olives you’ve got a speedy snack to serve with a snifter of wine.
It is delicious sprinkled over cooked dishes such as a traybake of vegetables, or a roast chicken, or a chicken sandwich. I love it over sliced tomatoes, or a sandwich loaded with peanut butter, sliced tomatoes, rocket or basil. But perhaps my fave way is with labna (drained yoghurt). I have found labna to be a revelation to people coming on my cooking classes. They can’t believe how simple it is to make, how tangy it is, how creamy though not rich … in short, they fall in love with it. And when I sprinkle the labna with dukkah, they do a merry jig of complete happiness. In their minds at least. Dukkah and labna. Labna and dukkah. That should be your summer mantra. Such a simple snack to put together, and so delicious and good for you. To get jigging … spread ciabatta crusts, crusty bread, toasted bagels, whatever, with labna, load with char-grilled eggplant and red peppers, sprinkle with dukkah and devour!
