Nothing wrong with a boozy custard!

Memorable. Knock-out. Superb.

Soft and wobbly when removed from the oven, but they sink dramatically as they cool, making the perfect cavity to fill with cream or ice cream.

A French tart is always bound to raise eyebrows! Crisp, walnut pastry is draped over halved pears. When cool, the centre is filled with soft dollops of crème fraîche.

This sponge calls for oil, not butter. It’s easy to put together.

Golden, tender, sweet caramel flavours. Delicious.

Apples and blackberries always work!

I created a mega crumble so everyone can have seconds, or thirds, or crumble for breakfast.

Figs, maple syrup and flaky sea salt works!

Rice pudding is always popular – but these little beauties are the Rolls Royce version!

Yum! Cruncy pastry, tender tangy plums … all you need is ice cream!

Superb! Roasted apricots, pine nuts and pastry.

Nectarines, coconut and rum. Sounds good. Tastes even better.

A decent slab of vanilla ice cream per serve of these scrumptious nectarines is obligatory!

This is a doddle to make – get the kids on to it. The alcohol in the wine cooks off, but used fruit juice instead.

Cointreau-soaked sponge, berries and cream!

A dacquoise is like a posh pavlova, but so much nicer. It’s as if Pavlova goes to Paris and has a lot more fun!

Honey, cinnamon and strawberries with cheesecake. Tastes so good!

A delicious tart that’s posh enough for a dinner party, but with homegrown rhubarb, an affordable option for the family.
