Tamarillo baked

Introduction

Yum! Brown sugar tames the bitter edge of tamarillos.

Serves: Makes 4

Ingredients

4 just-ripe tamarillos
Soft brown sugar for sprinkling
Ground cinnamon for sprinkling
8 thin strips orange peel
Vanilla bean ice cream for serving

Method

1 Cut tamarillos lengthways, leaving stalks on. Transfer to a shallow ovenproof tray lined with baking (parchment) paper. Sprinkle with brown sugar and a few pinches of cinnamon, then put a piece of orange peel on each tamarillo half.

2 Have oven preheated to 150°C (300°F). Bake for 25-30 minutes, or until tamarillos are collapsing and the juices have started to flow. Serve warm with scoops of vanilla bean ice cream.

Recipe Notes

Rark this up a notch and splash halved tamarillos with brandy before sprinkling generously with brown sugar and baking until bubbling. They smell pretty good as they cook!
