Shared Kitchen Plum Crumble

Introduction

Serves:

Ingredients

400g dark-fleshed plums, halved and stones removed
150g (5 oz) standard flour
120g (4 oz) butter, cut into small pieces
3 Tbsp & 1 tsp caster (superfine granulated) sugar
½ cup roughly chopped Brazil nuts
Finely grated rind ½ lemon
Cream, ice cream or plain yoghurt for serving

Method

1 Preheat oven to 180°C (regular bake, not fanbake), and set a baking sheet or tray on the oven rack to catch any spillages if fruit bubbles over.

2 Sift the flour into a bowl and add the butter. Rub butter in with your fingertips, or use a pastry blender, until well amalgamated, then mix in 3 tablespoons of sugar, the Brazil nuts and lemon zest.

3  Arrange plums in a china baking dish cut side up. Sprinkle with 1 teaspoon of caster sugar. Spoon crumble over the top, ensuring all the fruit is covered.

4 Bake the crumble for about 30 minutes, until the crumble is golden and the fruit is bubbling up around the sides of the dish. Serve warm.

Recipe Notes

You can tweak this in several ways – plums love cinnamon, so a few pinches added to the crumble adds another flavour. Or change out the Brazil nus for almonds. And check out the other crumble recipes on Shared Kitchen.
