Macadamia & Ginger Spread with Persimmon

Introduction

This is a gorgeous combo – if you love ginger, add a bit more! Serve it with interesting crackers – perhaps ones with a fruity note.

Serves: 6

Ingredients

Macadamia & Ginger Spread
125g (½ cup) cream cheese
1 Tbs finely chopped stem ginger in syrup
1 tsp stem ginger syrup
2 Tbsp chopped salted macadamia nuts, plus extra roughly chopped nuts for garnishing
1 tsp lemon juice
Crackers for serving

Persimmons
2 firm persimmons
2 tsp lemon juice
Freshly ground black pepper
Sprinkle of sea salt
1 Tbsp small mint leaves
1 makrut lime leaf, finely slivered

Method

1 In a bowl, whip the cream cheese, ginger and syrup, nuts and lemon juice. Refrigerate until serving time; the spread can be made 1-2 days before serving.

 

2 Peel the persimmons and slice. Toss in a bowl with the remaining ingredients.

 

3 To serve, spread mixture on interesting crackers and top with slices of persimmon.
