When New Zealand photographer Melanie Jenkins and her friend interior and prop stylist Claudia Kozub, went to Spain it left them with vivid memories of Gaudi’s architecture in Barcelona, the charming streets of Ibiza’s old town, and everywhere Melanie went, she had her camera in hand.
On her return to New Zealand, food writer and stylist Jo Wilcox asked for every detail about their culinary experiences. Jo researched and recreated the recipes, allowing Melanie to relive her Spanish adventure through food. And thus, Take Me to Spain was born.

JO WILCOX is a celebrated food writer and stylist with a decade-spanning career in the culinary world. From crafting recipes for top publications to cooking for the Queen on her early New Zealand tour, Jo’s expertise lies in creating dishes that are both approachable and full of flavour. Her career started at New Zealand House & Garden where she was a contributor for 17 years, she was the food editor at New Zealand Woman’s Weekly for 3 years and provided food styling, recipe development and written copy for many well-known magazines including Nadia, Food, and Taste magazine.
