Tomato & Avocado Salad

Introduction

This colourful, fresh and healthy salads begs the question: How can something so simple taste so sublime?

Serves: 6-8

Ingredients

1 small mild white onion (or red onion)
700g (1½ lb) heirloom tomatoes, or mixed cherry and vine tomatoes
¼ cup (about 12 large leaves) loosely packed small mint leaves
2 perfectly ripe avocados
1½ Tbsp lemon juice
½ tsp flaky sea salt
2 Tbsp extra virgin olive oil

Method

1 Peel and slice onion thinly. If the onion is very pungent, soak in icy cold water for 10 minutes, drain and pat dry with paper towels.

2 Slice, halve or quarter tomatoes and arrange on a large platter. Scatter with onion and mint. Halve avocados, extract pits and remove peel. Cut into cubes and put on top of tomato salad. Sprinkle with lemon juice, salt and oil. Toss gently and serve.
