Gingered Broccoli with Black Sesame Seeds

Introduction

Broccoli is great tossed with butter or oil, a handful of grated parmesan or a little grating of fresh nutmeg, but adding garlic, chilli and ginger gives it more of a kick along. A sprinkle of black sesame seeds at the end adds a nutty flavour.

Serves: 4

Ingredients

2 heads of broccoli or 2 bunches tender-stemmed broccoli or broccolini
Salt
1½ Tbsp extra virgin olive oil
1 large clove garlic, peeled and thinly sliced
1 medium-hot red chilli, thinly sliced (flick out seeds for a milder buzz)
1 Tbsp finely grated peeled ginger
Finely grated zest 1 lemon
1 tsp black sesame seeds

Method

1 Cut broccoli heads into florets, or trim stemmed broccoli. Cook for 2-3 minutes in a saucepan of gently boiling, salted water; the broccoli should remain crisp. Drain, rinse with cold water, drain again, then tip onto paper towels to dry.

 

2 Heat oil and aromatics in a medium frying pan (skillet) over low heat. Cook gently for a few minutes, stirring often, until garlic just starts to sizzle. Add sesame seeds and cook briefly, then add broccoli. Toss gently and heat until broccoli is piping hot. Serve immediately.
