White Peach & Tomato Salad

Introduction

Scrumptious, simply scrumptious. White peaches are sweet and juicy, without any bitterness, and they make tomatoes taste sweeter. Could you substitute yellow peaches?
Mmm, they are more assertive. I think white nectarines would be better.

Serves: 3-4

Ingredients

2 Tbsp extra virgin olive oil
Finely grated zest 1 lemon
1 Tbsp lemon juice or red wine vinegar
Flaky sea salt
Freshly ground black pepper
2 perfectly ripe white peaches
1 mild green or red chilli, halved, seeds removed and coarsely chopped
Small handful of yellow, red or black tomatoes
1 cup of small basil leaves
2 lime leaves, finely shredded and chopped, optional
1 perfectly ripe avocado, optional

Method

1 Whisk oil, lemon zest and juice, or red wine vinegar, a few good pinches of flaky sea salt and a generous grind of pepper in a bowl.

2 Wash peaches and chop flesh from stones. Add to dressing with chilli. Halve or slice tomatoes, add to bowl and give a gentle toss. Add basil, toss again. If using lime leaves scatter over salad. If liked, halve and peel avocado, extract stone and cut flesh into chunks and add to salad. Serve immediately.

Best accompaniment? Cheesy potatoes! Chop leftover baked potatoes, dot with butter, smother with grated Cheddar and bake until crusty.
