There are 4 steps to the recipe …So allow plenty of time: tomato sauce, cooking potatoes, frying eggplants and cheese sauce. Cheese sauce! I know, I know, it’s from the Ark, but like all good things, they go in and out of fashion, and cheese sauce has been snubbed long enough – and it’s time to get a handle on it once and for all.
If you want to spread the prep over 2 days you can make the tomato sauce a day or more ahead, and grill or fry the eggplant 1-2 days ahead. However you choose to do it, allow plenty of time to put it all together so it becomes an enjoyable and rewarding experience. Potato & Eggplant Moussaka
