Straight into it this week – lentils and green beans and schnitzel …
Some great ideas for mid-week meals, albeit with a little zhuzhing-up. Both the lentils and beans have ginger, a great cure-all for many ailments, and along with garlic and greens, you’ll be adding some goodness to your family diet with these dishes. Schnitzel has long been a family favourite to the point that we just call it von crumb meaning with crumbs. It appears we are not unique. SCHNITZEL REIGNS SUPREME

Yes, it’s true! More talked about than roasted Brussels sprouts, than char-grilled reindeer, than fried huhu bugs (errrkkk!), is schnitzel, or as it’s known in our household, snitzel von crumb. It’s the talk of the Twitter-verse. Who knew? I certainly didn’t when I decided to cook schnitzel on Monday night. Maybe it was telepathy because schnitzel madness was erupting around the globe. I simply wanted a good Monday night dinner. Here’s my version – and I use pork! Though you could use beef, chicken or lamb. Read all the tips and tricks here.

LENTILS & SPINACH

While I was thinking about mid-week meals, brown lentils came to mind. I was wanting to create something inexpensive to help with the supermarket shop, and I created a humdinger. It’s pretty hot! But you can tone it down by removing the chilli seeds or forgoing the shake of chilli powder on top. But if you like a feisty bite, go for it – you can always serve extra yoghurt on the side. And to answer a few questions, can you use canned lentils? Yup. And … frozen spinach? Mmm mmm. Yep.

CURRY LEAVES & GREEN BEANS

Curry Leaves have a complex aroma reminiscent of curry powder, and a spicy somewhat butter though not unpleasant flavour./ In this dish they make a counterpoint to the sweetness of onion, garlic and ginger.
